Coco muffin with cherries and semolina
Ingredients:
1.5 dl of milk
180g Sunoko sugar
3 tablespoons semolina
1 cup yogurt
1 egg
1 vanilla sugar
50ml oil
150g of flour
2 teaspoons baking powder
20g cocoa powder
100g of chocolate
12 pitted cherries
Preparation:
Bring the milk with the Sunoko sugar and vanilla to a boil, remove and leave to cool a bit, then add the yoghurt, egg and oil and whisk everything together with a mixer on the lowest speed for about 1 minute. Separately mix the flour, cocoa and baking powder and add to the liquid ingredients. Stir again for 2-3 minutes, then add about 70g of chopped chocolate.
Mix with a food processor, then pour the mixture into an oiled muffin tin. Place one cherry and the rest of the chopped chocolate on top of each muffin. Bake in a preheated oven at 200 degrees for about 20 minutes.
