I want to offer you three very tasty salads with beets. This is something new, hearty, all three Recipes without meat. From available and simple products. And I think even those who do not like beets, these salads will want to try for sure.

Great options for Lent, and just a great addition to meat or fish.

SALAD WITH BEETS, CHICKPEAS AND RED ONIONS

KBJU PER 100 GR:

76/2,4/3,2/8,6

The weight of the salad at the output of 1kg.180g

WE WILL NEED:

Boiled/baked beet 3 pieces (450-500 gr)

Tinned chickpeas 240g (or boil 100g of raw chickpeas, 4 hours soaking in water)

Pickled cucumbers 250g

Fresh parsley 50 gm

Red onion 1pc (130g)

FOR SOUCE:

2 tablespoons olive oil

Mustard with grains 1 tbsp

Lemon juice 2-3 tbsp

0.5 tsp. salt

Ground pepper to taste

GEORGIAN BEETROOT SALAD

KBJU PER 100G:

156/2,4/9,2/14,9

Final salad weight 660g

WE WILL NEED:

Boiled / baked beet 3 units (450-500 gr)

Walnuts 50 g

Dry cranberries 50 g

Garlic 3-4 cloves

Hummels-suneli 1 tsp.

Coriander ground 1 tsp.

Fresh cilantro 30 g

Hot pepper 0,5 units (7-10g)

Apple or wine vinegar 2 tbsp.

Vegetable oil (any) 2 tbsp.

Salt 0.5 tsp.

Ground pepper to taste

BEET SALAD WITH MUSHROOMS AND CARROTS

KBJU PER 100 GR:

75/2,4/3,5/8,4

The output weight of the salad is 1kg.050g

WE WILL NEED:

Boiled/baked beet 3 units (450-500g)

Pickled mushrooms 150g

Canned peas 150 g

Korean-style carrots 150 g.

Salt 0,5 tsp.

Ground pepper to taste

Sour cream (I have 15% fat) 150g. Instead of Sour cream you can use 2 tablespoons of vegetable oil
