SALAD WITH BEETS, CHICKPEAS AND RED ONIONS

Boiled/baked beet 3 pieces (450-500 gr)
Tinned chickpeas 240g (or boil 100g of raw chickpeas, 4 hours soaking in water)
Pickled cucumbers 250g
Fresh parsley 50 gm
Red onion 1pc (130g)
FOR SOUCE:
2 tablespoons olive oil
Mustard with grains 1 tbsp
Lemon juice 2-3 tbsp
0.5 tsp. salt
Ground pepper to taste

Apple or wine vinegar 2 tbsp.
Vegetable oil (any) 2 tbsp.
Salt 0.5 tsp.
