A quick coconut cake, and even cheap. You have these ingredients at home, I think you only have to buy coconut :)
Ingredients:
2 whole eggs
200 g of flour
50 g of cocoa
1 baking powder (10 gr)
200 ml of milk
100 ml of oil
100 g of sugar
Coconut filling
1l of milk
6 tablespoons sugar
7 tablespoons grits
200 g of coconut
Preparation:
First the fillet is made.
Bring the milk to a boil.
Mix sugar and semolina, then cook when it thickens, and it won't be as strong as pudding, add all the coconut and stir.
Leave to cool.
Beat the egg whites with the sugar, then add the egg yolks and stir. Then add the oil to the milk with the whipping, and also the milk.
Finally add flour, cocoa and baking powder.
Combine everything with a food processor.
While preparing the crust, the oven is heated to 180 degrees.
Tray choose which dimensions you want.
I chose a bigger one, so my cake is as thin as bars when I cut it.
So from 25 cm onwards, so that it would not be too thick.
Pour the flour over the flour and pour a little more than half the measure for the first crust, because I put half of it and it turned out much thinner.
Then bake for 5-6 minutes, to catch the crust.
Put the filling, arrange it nicely and pour over the rest of the crust mixture.
Return to bake for another 20-30 minutes, depending on the thickness and the oven.
Test with a toothpick.
Insert and remove, and if it is almost dry, it is ready.
It cannot be completely dry due to the coconut filling.
Turn the baked cake upside down on a board, it should just fall out and leave to cool.
Or wait for it to cool and then take it out on a tray.
Sprinkle with coconut on top, and you can also pour over the glaze, and then sprinkle with coconut, I'm like that.
