What You'll Need
1 Kilo pork tendeloin 8 Bacon slices 1 garlic clove, finely chopped. 1 handful chopped rosemary 1 handful chopped basil. 2 tbs butter. 2 tbs virgin olive oil Rock salt and ground black pepper
Procedure
Cook the bacon in a large pan for five to six minutes on medium - high, turning occasionally.Drain the bacon slices on a paper towel. Mix the garlic,basil,rosemary, and a large pinch of salt and pepper in a small bowl.
Cut the pork tendeloin into four equal portions and wrap each piece with the bacon strips and secure with one or two toothpick per piece.Dip both sides of the medallions in the seasoning mix.Melt butter and oil together over medium heat.Cook each medallions for three to four minute on each side preheat the oven 180°C(Degrees Celsius)and place medallion in a dish into the preheated oven and bake for around 20 minutes.
