[] 1/2 desiccated coconut

Maja Blanca

[] 1 tbsp cooking oil [] 1 cup coconut cream [] 1 can alaska evaporated filled milk (370ml) [] 1 can alaska sweetened condensed milk (300ml) [] 1 cup cornstarch [] 1/2 cup of water [] 1 can whole corn kernel, canned (425g)[] 1 cup drain munggo in heavy syrup(optional) you can use Eden cheese

Topping

  1. In a pan over medium high heat, toast desiccated coconut, stirring often until golden brown.

  2. Transfer to a plate and set aside.

Maja Blanca

  1. Prepare desired container for the maja blanca by coating the inside with oil. Set aside.

  2. In a heavy bottom pot, combine coconut cream, Alaska Evaporated Filled Milk, and 3⁄4 cup Alaska Sweetened Condensed Milk. Stir and allow to simmer.

  3. In a bowl, combine water and cornstarch. Mix well until cornstarch is completely dissolved.

  4. Add in cornstarch mixture to milk mixture, stir constantly until mixture becomes thick.

  5. Once mixture starts to thicken, add in corn kernel and munggo. Stir well and quickly pour in to prepared container.

  6. Let cool completely till set.

  7. Sprinkle top with toasted desiccated coconut and drizzle with remaining Alaska Sweetened Condensed Milk.

Munggo contains many healthy antioxidants, including phenolic acids, flavonoids, caffeic acid, cinnamic acid and more. Antioxidants help neutralize potentially harmful molecules known as free radicals.
