Ingredints:
3 medium sized eggplants. Long cut
1 cup full of mustard and coconut paste
5 tablespoons mustard oil
Half a cup of coconut milk
1 teaspoon turmeric powder, 4 green chilli paste, salt and sugar
Boil black cumin
Steps:
Fry eggplant in mustard oil and set asideNow add black cumin and coconut mustard paste in the remaining oil and stir for 2 minutes
Add turmeric powder, salt, sugar and green chilli paste and stir for another two to three minutes.
Now slowly add coconut milk and stir well
Once the mixture is dry, add some hot water, add fried eggplant and stir for 2-3 minutes.Let it cook on medium heat for one minute, add a little water to it.
Now leave the gas stove and sprinkle some mustard oil. And garnish it with shallow fried greens and red peppers
