Good Day everyone! So I want to share to you on how to make a Chicken Teriyaki so this cooking style is how I make my own teriyaki but i searched on google since Chicken Teriyaki is one of the best dishes by Japanese so some of the ingredients I'm going to put are mixed, but I'll put some note so that, you can used whatever is available in your market.
So let's start and go to discussed the ingredients in making teriyaki sauce. First, we need a soy sauce more especifically light soy to reduce the sodium content but ordinary soy sauce is also acceptable just put a much more water in the mixture later.
Second is sugar. White sugar is the preferred sugar used in a traditional Teriyaki sauce but i prefer using brown sugar.
Note: you can also add Honey to make it more tasty. I'm using a honey when making this dish.
Third, sake (or rice wine vinegar if you have it) so since it was traditional dish by Japanese they are more likely to used sake but me as a Filipino, Im using any white vinegar so, you can try this also.
Fourth, Mirin (This is an optional ingredient because I understand not many readers have it or can find it. If you want to get yourself a bottle, any Asian or Japanese store will stock it. Otherwise, you can always order it online. Or just skip it all together)
Fifth is garlic but you can substitute garlic for ginger (well I prefer using ginger but you can also used both,depends on your preference)
Sixth, chilly powder ( or any spices you'd like to add) it is only optional since not all people like spicy food.
Note: You can also put an onion leaves to make the dish fragrant.
And lastly, our main ingredient is chicken thigh or chicken breast. However, Most people using thigh part since it is more juicy (but, i prefer using breast part)
Moving on, let's start with the procedure. First is how to make the teriyaki sauce. This is quite easy, you just need to estimate and look on the size of the chicken that you're going to use. So this is only as reference for all of you.
The process in making teriyaki sauce in the size of one thigh part/ half breast part are:
Get ready a bowl and put a 3 tbs of soysauce; add 2 tbs of vinegar/sake ; 1 ½ sugar (add 1 tbs of honey if you like or instead of sugar you can use honey) ; add a little of garlic/ginger( depends on your preference 2 pcs from the part of one whole garlic and 2 inched ginger size is the maximum) ; add ¼ cup of water ( but if you used light soy sauce you can used (4tbs of water)Ps. now you can add the Mirin,onion leaves and chilly seasonings if you have and if you prefer. After this you stir and mixed all the ingredient until they are already mix.
Next is the procedure in cooking the chicken part. So first, put a flour on the whole part of the chicken that you're going to used and add pepper after.
Fry it with a little amount of oil that is only enough for the chicken( remember a little only) with medium vheat for 5-10 minutes ( 8 is the average duration) for each side/phase.
After cooking the chicken, cut it to the size that you wnat mostly, it is in cube or rectagular shape.
Now that all the ingredients are ready, you can start making the dish.
Put in the pan the 'cut chicken' with medium heat.Pour sauce over chicken and simmer until sauce has thickened slightly and chicken is cooked through, 5 minutes.
