Your homemade Fried Chicken

Fried chicken is a staple food in every Filipino household whenever there is something to celebrate. Whether it's a family member's birthday, baptism, wedding, town fiesta or even if it's just payday; crispy breaded chicken is an automatic item in the menu.

A family that loves to eat makes an effort to formulate their own version of golden fried crispy chicken. Here are the ingredients that you usually need to cook your own homemade fried chicken:

  • Chicken cut into pieces (1kg)

  • All purpose flour (4 cups)

  • Salt

  • Pepper

  • Cayenne powder

  • Garlic powder

  • Onion powder

  • Paprika powder

  • MSG (optional)

  • Clear soda (7Up or Sprite) 1 can

  • Eggs (2 small or 1 double yolk)

  • Fresh chilli (3-5 medium pcs) & garlic (3-5 cloves)

  • Bread crumbs (optional)

  • Oil for deep frying

Wash the chicken under running water, making sure that there are no feathers and dirt are left. You can trim the fatty parts if you want to. Dry them with a paper towel. Get your fresh chilli & garlic. Crush them together using a blender or any food processor. If you don't have one, you can grate the garlic and finely chop the chillies. Mixed it together with a teaspoon of salt & pepper and about 40ml of that clear soda in can that you bought. Rub the mixture into the chicken. Set aside in the fridge for about 30minutes. If you got more time to marinate it, do so.

Meanwhile, in a separate bowl, mix in 2cups of all purpose flour, 1 tablespoon of each of the following: garlic powder, onion powder, cayenne powder, paprika powder, pepper, and half a teaspoon of MSG. Set aside. This will be your savory powder coating. The amount of the optional bread crumbs is up to you.

In another bowl, throw in 2 cups of your all purpose flour, a teaspoon of salt & pepper, a tablespoon of cayenne & paprika powder. Add the egg/s and whatever's left of the clear soda. Mix them together until you form a not so viscous batter.

Dip the marinated chicken into the batter, gently shake off the excess and coat it with your savory powder. Tap off the excess and deep fry it under medium heat fire for 12-15minutes depending on the chicken part. When the chicken is already golden brown, let it cool down a little on a paper towel to drain the excess oil. Serve with gravy or ketchup. Enjoy your homemade crispy fried chicken!
