Carrying on with the 10 minute timer in Freewriting (c99e), today I am thinking about Creations in the Kitchen in 10 Minutes.

Have you Ever Noticed...

Over the years as I have enjoyed cuisine from around the world and varying forms I have started to realize something.

Whether it was ox tongue in Nepal or some of the bush meat in Tanzania I was always left thinking something.

The amount of processed food everywhere else is just downright alarming.

That may not sound so crazy if you're from somewhere that still has joint family life with meals together and cooking being a daily routine.

Yet in the U.S. the constant go-go mentality can be a detractor.

2020 Benefit into 2021

While 2020 had many challenges and hardships for many, I found one incredible success that is carrying over into 2021.

Spending more time at home and in the kitchen has been a blessing of profound proportion. I have started to cook and not only just regularly but with flare, pizazz and an overall joy that I did not have before.

For example, one of my favorite desert toppings is whip cream. It is an elegant solution for desert beverages to baked goods. Just fantastic.

I had never taken the time to see how it is made and even take a chance and make some.

Well let me just say that with 3 ingredients, I can't imagine why I would ever have a store bought whip cream again.

Combine 2 cups of heavy cream, a 1/4 cup of confectionary (powdered) sugar and a teaspoon of vanilla extract and you're in business.

If you have a mixer you set it on medium and let it go for 10 mintues otherwise find a good song to whisk too because it will take you a bit.

The point is, the taste was better. I actually know what the ingredient list is and more importantly, I can pronounce them. Plus it has the energy behind it of being made at home.

Sounds like a perfect recipe...

For the Rest of 2021

While whip cream is not the only thing that we have made at home, our list is endless, and it is a great example for other items as well.

Breads, freezer meals, crock pot and instapot recipes have been a steady part of our days and from that we have come to realize and appreciate the true joy of cooking as well as the benefits which come from it.

Not to mention our waistlines have benefitted as well. While many have enjoy a couple pound / kg increase over the last year, we have gone the other and I'm convinced it is due to not having all of the preservatives and other chemicals that come with most non-fresh foods we find in the supermarket.

So for the rest of 2021, we have new habits and skills that will keep everyone moving forward and thriving. (10:44)

The other gem that we have absolutely incorporated into our meal planning is roasted vegetables. Any vegetable on a baking sheet in the over at 400F for 20 minutes and broiling the last couple minutes is amazing. Drizzle with a bit of olive oil and add garlic salt or even dill and the outcome is incredible.
