Fried rice and purple yam in a rainy and cold Wednesday! Hello here, hope you're all fine and safe today with family, pets, or with friends, wherever you are right now on planet Earth. Huwag lang with Marites and friends and mahirap yun hehe. I'm done eating my early dinner (late post lang) and ano ito, fried rice galore? We have "bahaws" or leftover rice this morning and my mom cooked rice with diced purple yam for lunch, so since I'm craving for fried rice and excited to use the garlic-flavored coconut oil, I tried it to plain rice and just added spring onions. I also tried it to rice with diced purple yam and tomatoes and I just love it! I thought, I would only love ube in cakes, cookies, bread, ice cream, or eating a boiled one with a little sugar but I'm loving it if mixed with rice. You can really save rice with this and our veggie soup also has purple yam slices with sweet potato tops, and lady's fingers. Oh di ba, anong klaseng luto ito? Have you tried purple yam in veggie soup? It's a substitute for potatoes, squash, taro or if you have no other food to eat, purple yam is the key. And I realized that it was just right that I have planted many purple yam in the garden last Monday when my internet connection is not okay. The reason I was not feeling bad that time because, I have a mission in the garden to plant more foods ahehe. For even our chickens and furbaby Thunder love to eat ube. Happy and Blessed Wednesday!
