Tortang talong is a type of or eggplant omelet wherein grilled eggplants are soaked in a beaten egg mixture and then fried. This is a simple yet delicious Filipino recipe that you can enjoy for lunch or dinner.

3 pieces of eggplant, medium size
4 eggs
4 grams of salt
2 grams of pepper
200 grams of lard
Steps or Procedures
30 minutes Roast the eggplant until it softens.
Drain the eggplant and cool slightly for 1 minute. Peel an eggplant.
The eggplant must be slightly warm while peeling so that the meat does not come together.
After peeling the eggplant, cover it with a fork without separating the meat.
In a medium size bowl, Beat the egg with the salt and pepper.
Place the eggplant in the egg mixture and gently press the eggplant to mix with the egg.
Heat the oil in a frying pan. When frying, place the eggplant in the pan first.
Spread the eggplant lightly and pour the egg mixture around and in the middle using 1/3 cup.
With this the eggplant is scattered throughout the omelet. After 1 or 2 minutes, turn the eggplant tortoise or until golden brown.
Serve it while hot
