An old recipe that is kept from oblivion. The mantle is a type of meat pie. It tastes fantastic and it takes a little more effort to make, but it is well worth it.
Ingredients:
500 ml of lukewarm water
1 teaspoon salt
850 g of flour
700 g of ground beef
2 onions
4 tablespoons butter
100 ml of oil
1 tablespoon dry spice
1/2 teaspoon pepper

500 ml of sour milk
1 clove garlic

Sift 750 g of flour, then add with, mix a little by hand, then pour water and knead by hand. Knead a smooth dough. It is necessary to mix the dough well. Divide into 5 equal parts, each ball has approximately 250 g.
Make balls and cover with a bag and a cloth and let it stand for 30-60 minutes. No less than 30.
During that time, finely chop the onion, add minced meat, dry spice and pepper and mix by hand.
Melt butter with oil, over high heat. When it boils, remove from the heat. It must boil for the butter and oil to blend well.
When the noodles rest, stretch each to a diameter of approximately 20 cm and coat each with 2-3 tablespoons of melted butter and oil.
Stack the circles on top of each other as you grease.
Put one coated and then the other, so to the fifth, the fifth do not smear.
Sprinkle flour on top, and put some knitted, preferably white cotton, over the table, and sprinkle it with a little flour. You can also work on the table, but then you need more flour, less it sticks to the fabric.
Stretch with a rolling pin as far as you can and then with your hands to the end of the table.
When you have stretched, cut the part that hangs from the table, remove the thickening with a knife (ends). Put 1/5 of the stuffing on the edge along the entire length and sprinkle a little with butter and oil Wrap one circle around the meat and cut so that you now have a thin and long roll.
Then cut all the rolls to a length of 3-4 cm. You get small pillows, at least that's what they look like to me.
Grease a tray with a diameter of 35 cm and arrange the cut squares and pads in a circle, as you wish, and coat them with the rest of the oil and butter.
While rolling the oven, heat to 250 degrees.
When everything is arranged and coated, put it to bake until it turns brown. At the end, when the baked and sour milk is, chop the garlic and spread it over the hot mantles and leave it covered with another pan for 10 minutes, then serve after 10 minutes.
