Olive oil begins its journey in the sun-drenched groves where olives, the fruit of the olive tree, are grown. These trees native to the Mediterranean region require ample sunlight and mild winters to flourish. Once the olives reach optimal ripeness typically from November to January in meditation region and until February in east , they are harvested by hand to prevent bruising.
The next step is extraction. Freshly picked olives are washed to remove impurities and then crushed into a paste using large millstones or modern steel drums. The goal here is to break down the cells to release the oil. Following this, the paste undergoes a process called malaxation, where it's slowly churned to help the oil molecules coalesce. The final stage is separation by centrifugation where the mixture is spun rapidly to separate the oil from water and solid residue. The result? Pure, unrefined olive oil.
