Crispy Peach Mango Pie

Good afternoon everyone. Today, I will be sharing a very easy and affordable recipe. I will be sharing the recipe on how to make Crispy Peach Mango Pie using sliced bread.

Ingredients used:

  • 1 cup of mangoes, cut into small cubes (about 1 large mango)

  • 1 cup of peaches, fresh or from 1 can. Syrup drained.

  • 4 to 5 tbsp sugar (adjust to preference)

  • 2 tbsp cornstarch

  • 2 tbsp water

  • 12 to 15 slices of white bread

  • 2 eggs beaten

  • Plain bread crumbs

  • Cooking Oil for frying

Instructions for cooking:

  • In a medium pan, combine the mangoes and peaches cook it for about 8 to 10 minutes or until the juice comes out.

  • Put the sugar and stir it and cook it until it became soft and slightly mushy and also has caramelized.

  • In a small bowl, combine the cornstarch and water. Add it to the mixture and cook it for another 1 or 2 minutes or until the mixture is thick. Remove it from the heat and cool it completely.

  • Trim the edges of the sliced bread and flatten it with a rolling pin.

  • Brush all sides of the flatten bread using beaten egg.

  • Add about 1 1/2 - 2 tbsp of peach mango filling. Roll and seal the sides using a fork.

  • Dip it in beaten eggs until evenly coated and roll it in breadcrumbs.

  • Heat cooking oil in a pan and fry until all sides are crispy and golden.

  • Remove from oil and drain it on paper towels.

  • Serve it while warm.
