Wild yeast are so unpredictable. You never know how long will take them to accustom to your flour naturally. They can be very active at one end, then suddenly not active on another 😂 But these babies under an unexperienced hand decided to bloom however they want. Now 🤞🏻 fingers crossed that they will turn out soft and spongy and stay spongy! 😅
