Lowkey Homemade Snack: Shakey’s Potato Mojos We all miss going outright? We missed our food trips and family or friends gathering in different fast-food restaurants. When community quarantine started, my love for working in the kitchen started as well, simply because, I love eating first. J My younger sister and my niece would always ask me to cook something for them to have some snacks and I wanted to be a good sister and aunt, so I decided to try this recipe. I missed going too and eating out, so I decided to feel outside even if I am at home.             Introducing …. Homemade Shakey’s Potato Mojos – this is just a lowkey way of making a snack out of the potatoes stocked in our refrigerator. Hope you will like it and I hope you will try it also.             *What are we going to need?*             **Ingredients:**                         5 big tomatoes                         1 pack Crispy Fry (Breading Mix)                         1 can Evaporada (I used Alaska; you can use what you prefer.)                         1 cup All-Purpose Flour                         2 Large Eggs                         Black Pepper (to taste)                         Oil (for frying)               *What are we going to do?*             **Procedure:** 1.      Peel and clean the tomatoes. 2.      Slice it with enough thickness and just follow its normal shape. When all potatoes are done. Set it aside for a while. 3.      Now, mix All-Purpose Flour, Crispy Fry - Breading Mix, and Black Pepper. Stir to mix it well. 4.      Next, combine in another bowl, the Evaporada, and the eggs, stir to mix it well. 5.      Then, put all the three right in front of you – the sliced potatoes, the breading mix, and the eggs with milk. 6.      This time, you have to dip the tomatoes on to the milk and egg mixture first, dip it well and make sure that all sides are coated or wet. 7.      Then, dip it to the breading mix. (You can dip it again with milk and egg and then back to the breading mix. It depends on how thick you would like to have your coating.) 8.      Repeat procedure numbers 6 and 7 down to the last slice of potato. 9.      Then, heat a pan or casserole with enough oil to deep fry your potatoes and wait until the oil boil. Then, turn your fire into medium to smaller heat. 10.  And then, fry your potato mojos until golden brown. 11.  Put it in a strainer with the tissue under to absorb the oil. 12.  Enjoy!             So easy to make and yummy to eat! Enjoy while it’s hot! You can use tomato or banana ketchup as sauce or mix tomato or banana ketchup with mayonnaise. Yep! That’s right, you can mix it and it’s yummy. Go! And if you have gravy at home, then perfect!   You can prepare this dish for yourself alone, for your boyfriend or girlfriend, for your friends and your whole family. Easy Snacks for Kids and Everybody at Home: Potato Cheese Balls Some of us are no longer in quarantine, but still, our kids are not allowed to go out. If you are used to treating your kids out, worry no more! You can make this quick and delicious snack for your kids. I did this at home as well for my younger sister and niece, they liked it and I love it too. So, what are we going to need? **Ingredients:** *5 Big Potatoes* *3 Large Eggs* *3/4 tbsp Sugar* (Enough to taste) *Cheese* (Have a lot if you want it cheesier) *Bread Crumbs* (If you don’t have bread crumbs at home, crush a Skyflakes or any cracker biscuit that’s not sweet of course. Promise! It works!) *Oil* (for frying)   And, What are we going to do? **Procedure:** 1.      Prepare all ingredients and start, peeling off and cleaning out the potato for it to be ready. 2.      Prepare your casserole. Put water inside it enough to boil the 5 big potatoes that you peeled. Then, boil it for 10 to 15 minutes and check it if it's soft enough. When it’s already soft, you drain the water on your drainer. 3.      Allow the potato to be warm enough that you can already touch it without concerning yourself that you might get burned. 4.      Then, put your potatoes in a bowl and smashed or crushed them. 5.      When you finish crushing or smashing the potatoes, add on 3 or 4 tbsp sugar and mixed it well. (You can always add more if you want it sweeter.) The reason why we used sugar is to balance the original taste of the potato. 6.      Keep the bowl with smashed or crushed potato steady, and prepare your egg and cheese. 7.      Beat the eggs and cut the cheese into cubes. 8.      Then, form circles out of the smashed or crushed potato that you prepared. Form and form a big circle, medium sized or enough size for your cheese. Then, insert you’re a cheese cube inside the circled smashed or crushed potato, then in circular motion, shape it again to form a perfect circle of potato cheese ball. 9.      Deep it on your beaten eggs. 10.  And, coat it with bread crumbs. 11.  Repeat procedures 8 to 10. When all your potato cheese balls are ready, we will start to deep fry. 12.  Prepare your pan and heat the oil. 13.  Then put in the enough number of cheese balls that can fit in your pan. 14.  Stir it slightly, enough to allow all sides to be fried. 15.  Wait until it’s golden brown and get it!   Enjoy while it’s hot! You can use tomato or banana ketchup as sauce or mix tomato or banana ketchup with mayonnaise. Yep! That’s right, you can mix it and it’s yummy. Go!   You can prepare this dish for yourself alone, for your boyfriend or girlfriend, for your friends and your whole family.   Try it and let me know!

Quick and Easy: Garlic Buttered Shrimp Staying at home allowed me to experiment different dishes for lunch or dinner at home. One day, my mother asked me to cook the fresh shrimp that she bought and I thought how to cook it in fast and easy way that will allow me to keep calm and chill while cooking. So, I thought of making Garlic Butter Shrimp. Garlic Butter Shrimp is a super easy dish to make that’s why I took it as an easy challenge in the kitchen. This recipe shows how to cook this beloved dish the Filipino way. I like how it turned out. The dish is rich and flavorful. I enjoyed eating it with newly cooked white rice and even without the rice. The use of shrimp with scales and head make this unique from other versions. People who are used to buy frozen shrimp from the supermarket might find this uncommon. Cooking shrimp in this form is actually a common practice in some Asian countries, including the Philippines. You might wonder if that’s possible and the answer is totally yes. It’s so yummy and you’ll find most of the flavors concentrated below the head.   **Ingredients:** 300 grams shrimp washed and cleaned 1 can of 7 Up or Sprite 4 cloves garlic, minced 1 small onion, minced 2 tbsp butter 2 tbsp tomato sauce (or tomato ketchup, that’s okay) Salt to taste Ground black pepper   **Procedure:** 1.      In a deep bowl marinate the shrimps with 7up drink or Sprite for at least 2 hours. (So you can still write an article in read.cash while marinating.) 2.      After marinating. Prepare your pan and preheat it. Then, melt butter in your pan in a medium heat then sauté the garlic and onion until soften. 3.      Then, add the shrimp give it a good stir and increase the heat. Keep going until all sides turned orange. 4.      Add tomato sauce and the 7Up or Sprite that you used to marinate the shrimp and mix everything well. 5.      Leave it boiling for a while. 6.      Then, add salt and black pepper to taste. Then stir to mix. 7.      Then leave it boiling until the liquid become sort of creamy. 8.      Serve it hot and enjoy!   You can always adjust everything if you have more grams or kilograms of shrimp. You can prepare this dish for yourself alone, for your boyfriend or girlfriend, for your friends and your whole family.   Try it and let me know!

From 58kg to 50kg – Achieved! Yes, that’s right. Although, losing weight was not really in my plan way back 2018. Maybe it happened because of my busy schedule as a teacher and at the same time as a graduate school student. I was juggling for my schedule half of 2018 and in 2019 as well. But I am not saying I lose weight because of pure stress I think it was made possible because of my change in food intake. 1.      I always drink hot lemon juice with honey every morning, 30 minutes from the bed. (You extract the lemon juice directly from the lemon fruit, then, mixed in hot water and honey to taste.) 2.      Throughout the day, I practice drinking water every 30 minutes. And I drink a little “lot” before I eat my meal. Water kept me full and allowed me to only have 3 meals in a day. No more snacking just water. However, you have to eat healthily and enough food during breakfast, lunch, and dinner. But, if you want to take a snack, eat fruits or just a lightly flavored biscuit. (Here in PH, I love Skyflakes plus tuna for snacks.) 3.      And I refrained until I stopped taking in the following foods: a.       Bread (There are a lot of suggestions that avoid only the white bread and wheat bread is okay, but as for me, I avoided until I stopped eating the bread of all kinds and form. Haha) b.      Sweet Treats (Candies, chocolates, cakes, biscuits, ice cream, etc. However, it’s hard to stop eating them, so I just refrained from eating a lot of them.) c.       I stopped drinking coffee. d.      I refrained from drinking milk tea. Huhu e.       I stopped eating Junk Food f.        I stopped drinking soft drinks. (Since I have hyperacidity also, I stopped drinking soft drinks and juice mix.) g.      I refrain from eating in Fast Food stalls. (You know, burger and fries and everything nice ... plus pizza and frappes and sweet cold drinks, I refrained from taking them. I as well save money. :)) 4.      I drink lemon juice again 30 minutes after my dinner. But with a full effort at night, I usually boil water in a casserole and add lemon slices plus ginger and I let it boil until they seemed mixed already then, I drink it. Just be careful not to burn your tongue. What I love about having this is that it allowed me to po*p every morning. I can say that it helped in digesting my food maybe.  5. Your daily activities will affect your body as well, do something that will allow your body to move. Like, walking at your office or using the stairs instead of using the elevator. You have to sweat a little every day. Anyway, we might have different ways of losing our weight and we aren’t necessarily required to be skinny or thin to be called sexy, we shouldn’t have that as a motivation but rather just think of how will we be physically healthy. I cannot say that I am sexy now, but I am sure that my weight is ideal for my height and I am happy with my body. Always consider your BMI. Now, I am giving my best in maintaining 50kg especially, eating a lot is inevitable when you have nothing to do at home. I'll share with you soon, my ways of maintaining my 50kg.

Hombang Isda/Adobong Isda (Fish Adobo) Are you thinking of having another recipe for your fish inside your fridge? I don’t know if this is common to your place or you’ve tried this before at home for lunch or dinner. Hehe. I cooked this when we are on ECQ because I was really browsing that time on having an unusual way of cooking fish. I would just like to share here what I discovered. **Isda Adobong Isda (Fish Adobo) –** is another variety of the popular Filipino dish, adobo. If you are craving seafood, you can make this simple, delicious fish adobo quickly and be enjoying it in no time. Enjoy this recipe! **Ingredients** 1 cup of water 1 medium-sized fish, sliced 1 red chili pepper (optional) 1 teaspoon of whole black peppercorns 1⁄4 cup of soy sauce 1⁄4 cup of vinegar 3 tablespoons of cooking oil 4 cloves of garlic, peeled then minced 4-5 pieces of bay leaf sugar   **Instructions:** 1.     Combine all the ingredients except for the cooking oil and sugar in a sauce pan. 2.     Bring to a boil over medium heat. 3.     Add the sugar according to your taste. 4.     Then reduce heat to low and simmer for 30 minutes. 5.     Turn the fish over halfway through the cooking time. 6.     When the fish is thoroughly cooked and the sauce is thickened remove it from the heat. 7.     Transfer to a serving plate.     Enjoy!

Kori Kohi: Could be Milo or Coffee Do you want to try another way of enjoying the taste of your coffee or chocolate drink? Are you tired of mixing manually or with an electric mixer your coffee formula to achieve the best dalgona coffee? Well, you gotta try this! J It is really easy! It just requires the following ingredients: **Coffee/ Milo/ Choco Drink** **hot water** **milk (sugar is optional)**               * And it should be done the day or night before you want to enjoy it. ;)   Follow these simple steps to create your own Kori Kohi at home:   1.       Melt two to three tablespoons of instant coffee in 1 1/2 cups of hot water. You can add sugar at this point, only if you want it sweet. Alternately, you can also use brewed coffee. And you can just change that coffee to a Milo or any Choco powder drink you have at home. If you don’t prefer coffee of course. J   2.       Let it cool down a bit and pour it into an empty ice tray. Just remember to not fill the ice tray to its brim because the liquid needs room to expand to become ice. (Just like when you prepare ice cubes. J )   3.      Let it freeze overnight until it gets an opaque coffee or chocolatey color.   The next day, you go check it out on your freezer. Haha   1.       Fill your glass with the coffee ice cubes. 2.       Pour warm milk over the coffee ice cubes. Mix! You can also use fresh milk if you want. 3.       To make your own sugar syrup, you can melt equal parts sugar and water in a pan.  *****And Enjoy your drink!***** Also, if you are having Coffee Kori Kohi you can swap the milk with hot chocolate to make iced mocha. You can always modify. ***We made this many time at home. Try it!***

Whipped Egg Whites: Baking Powder Replacement In Pancakes HOW TO MAKE A PANCAKE without Baking Powder? Since the start of the Enhanced Community Quarantine in our place, I have brainstormed a lot of things to do and skills to learn. One skill that I targeted developing during the ECQ was cooking and the easiest morning breakfast or morning snack that I did was to make a Homemade Pancake using the available ingredients that we have: Flour, Milk, Egg, Salt and Sugar. Yes, we do not have a baking powder at home and even yeast. So, I did a research and arrived on a certain channel on how to achieve a fluffy pancake without baking powder. ***Ingredients:***             Plain Flour (1 cup)             2 Eggs             Milk (Half Pint)             Sugar (3 Tbsp)             Salt (You’ll need a pinch or more)   ***Procedure:*** **Start Mixing your Ingredients** 1.      Start with the flour. Put your 1 cup of flour in a bowl, make use of a strainer to separate the flour or avoid bubbles thick kind of flour. 2.      Add you 3 tbsp sugar. 3.      Then add or put on the mixture the pinch of salt or you might need more to taste. 4.      Then mix very well. 5.      Then on another bowl, separate the egg yolk and the egg whites carefully. Add the egg yolk directly to your mixture. 6.      Then, add the half pint of milk. Then stir and mix. (Don’t forget to scrape the bottom to be sure that everything is mixed well.) 7.      What will you do to the egg white? Well, you are going to mix and mix the egg white using fork or an electric mixer or a whisk. You have to whisk it until it’s foamy and creamy to the point that it will hardly spill out from the bowl. (It should be pure egg white, no mixture of the yolk for it to be effective.) 8.      Then, mixed the foamy egg white to the main mixture of flour and the other ingredients. Again, mixed it well. COOKING TIME!! 1.      Then, you heat your pan and when heated enough, spray some oil to grease it or you can use butter. 2.      Steady in medium heat and you can add a ladle of the mixture. And wait for it to be lightly brown and flip for the other side to be cooked. 3.      REPEAT THE PROCESS OF COOKING.

To All Asthmatics, We will be Okay. **T**hey say there is no cure with our diseases which is asthma. For some, it’s not that severe or it’s a kind off “not to worry about” health problem but it is! I know a lot died because of asthma. We have a family history of asthma and asthma is hereditary – passed from generations to generation. Sad. Well, in my family, my mom is asthmatic and my brother is asthmatic. I would like to share, my journey in having asthma. **M**y parents and elder siblings would say, I am not really asthmatic when I was a little kid although they suspected that I was but not that serious but it happened on October 30, 2012 that I was admitted in out local hospital and was confined that I have asthma. After that, time of mine in the hospital, I lived again normally but then it wasn’t really just for that time, that time was really the start of my sort of suffering. I suffered severe colds and heavy sneezing and it hurts my nose so bad and when I sneezed a lot, it will trigger my breathing. That’s how tiring it was. **W**hen I reached college, my suffering continued. I took up a degree in education and it was a busy and I’ll admit it a stressful course for me. Way back many would say “Why did you took up education? You’re asthmatic.” It’s not that we will always have physical activities most of the time but the stress might trigger and weaken my lungs. Many times, in first year college, I was admitted to the hospital and suffered a lot of absences in school. Then I started to have my maintenance (sprays, puffs, inhaler), I even bought my own portable nebulizer before my maintenance. I even experience travelling to another place bringing along with me my nebulizer. Haha. In all my four years in college, my maintenance was always with me and I have a monthly visit to my doctor. **A**fter college, was a different kind of world. I have to work and I really have to be strong physically since I will be teaching different subjects with different students and stress is real. My maintenance was still with me and in my 3 years of teachings, once a year I am admitted to the hospital because of severe asthma attack. But thank God, I am still alive. The lesson that I would like to share is that ALWAYS TAKE YOUR MEDICINE or MAINTENANCE. **N**ow, how was I really able to cope up with my asthma without my maintenance already? Well, I gave myself a time to work out, may it be just 10 minutes or 15 minutes of sweating out for a day or not really everyday but at least do it more than once a week. I engaged myself in biking (just around my house tho) and even walking and hiking, it’s risky for my lungs but I believe it is exercising my lungs.  And What else? In this time of the pandemic, asthmatic people like me are of high risk, I no longer have my maintenance with me, but I do have multivitamins and minerals in food supplements that I am taking. It’s from USANA – I am taking Cellsentials and Proflavanol C100. J  Believed me, these food supplements worked on my cells and helped my body. You can communicate with me for inquires.  Stay safe!
