FOODlog #380: A Chicken Burger This is a burger on the fairly new menu at the cafe I work at. It's a really good chicken burger that's juicy, flavorful, crispy on the outside and tender on the inside. The chicken is a boneless chicken thigh that we marinade in a buttermilk brine overnight. It consist of buttermilk, harbanero hot sauce, cayenne powder, paprika powder, garlic powder, pickle juice, dried oregano, MSG, and black pepper. This is brined overnight or up to 5 days in the fridge. Next, for the dry drench, we mix salt, pepper, onion powder, and garlic powder. When an order comes in, it's drenched in that dry seasoned flour mix and then deep fried for 6 minutes in a 170 degree Celsius and flipped in between for even cooking. The burger is topped with coleslaw, the fried chicken, chipotle mayo, and pickled jalepeno, sandwiched in between buttered brioche sesame buns that are fragrant and buttery. Super delicious burger that has become a favorite amongst customers and as well us the cafe crew.

FOODlog #379: Chicken with Chili Garlic Oil and Mushrooms with Peppers My colleague cooked our lunch the other day and he made some really delicious chicken casserole and stir fried mushroom with peppers. The chicken started off with garlic oil that has Korean chili flakes. It's marinated with the chicken for overnight and allowing the oil marinade to thoroughly flavor the chicken breast. It's then cooked and seasoned with salt and pepper then it's done. A super simple process to make this chicken dish but so loaded with flavor and aroma of chili and garlic which is amazing! The mushroom stir fried with peppers simply starts with sauteeing some onions and garlic with oil then mushrooms and peppers go in to cook for around 4-5 minutes and then seasoned with salt and pepper then the dish is done. We ate these 2 dishes with some simple white rice. What a delicious and hearty lunch to get us ready for a busy lunch service at the cafe.

FOODlog #378: Black Pepper No-Bake Cheesecake One of our chefs at the cafe made a no-bake cheesecake the other day. He was thinking of a way to finish up the cream cheese that we had left at the cafe since we changed our menu a couple months back and won't be needing to use cream cheese anymore. So he made this which is his first time making a cheesecake and boy was it delicious! 🧀🍰 This cheesecake was so smooth and silky and perfectly balanced with sweetness and earthy fresh black pepper cracked on top. He made the crust using cream crackers and blitz it in a food processor then mixed it with butter to form a base layer. It's then put into the fridge to set before the cheese filling goes on top and back into the fridge to set again. A simple no-bake recipe that'll you simply have to make! What You'll Need: Cream cheese 1kg Icing sugar 250g Whipping cream/heavy creamy 460g Vanilla extract 1 tbsp Crust base: Butter 170g Cream cracker 210g Do check out the video of the full recipe in the link below!: https://www.tiktok.com/@cheflifedw/video/7269773619784387848

FOODlog #377: Chicken & Tofu Soup with Pickled Vegetables Chicken & Tofu with Pickled Mustard Green This chicken and tofu with pickled mustard greens is a simple 1 pot dish that's appetising, a hearty Chinese stew that you have to try! Serve with rice and drizzle with chili oil to level up even further the deliciousness of this meal. What You'll Need: Chicken 1.2 kg Firm Tofu 500g 5pcs Pickled vegetables 250± g Tomatoes 250g Garlic 40g First off, saute in a pan garlic with oil then add in the chicken. Season the chicken with salt and pepper then cook it until golden brown before adding in the tomatoes, pickled vegetables and tofu that you've cut into blocks. Add in water then bring it to a boil and simmer for 3-4 minutes. Season to taste with salt and pepper and the dish is done. It's that simple to make this hearty soup. If you add in lesser water it can be a stir fry that pairs well with every ingredient as well. Try out this recipe and happy cooking!

FOODlog #376: Indian Lunch @ Yarl Went to Yarl the other day in Ampang to try out their crabs. We arrived around 2pm so they were sold out which is understandable since it was a late lunch for us. Other than the disappointment of not being able to get the crabs, everything else we ordered was super delicious! No complaints and only compliments. We had their rice set which comes with sides of vegetables was superb. Their vegetables were all so delicious and expertly cooked. My personal favorites were the Brinjal Milk Curry and Spinach Milk Curry. They had such a unique flavor profile and had layers of flavor. Can't wait to have these again! We also got some mutton, chicken varuval, and fried chicken which were good as well. The curries were on the spicier side which is a little above what I prefer but in terms of taste, they were really yummy. The fish curry was my favorite as it was slightly milder in spiciness compared to the mutton and chicken and the fish was so expertly cooked, tender and juicy yet not falling apart into the curry. Highly recommended! The highlight of the meal though was the appams. The sweet appam and egg appam were so good! Very flavorful, fluffy on the inner parts and slightly crispy on the outside, they were so good and our kids really loved them! Definitely recommended for any Indian cuisine lovers.

FOODlog #375: Kewpie Mayo Roasted Chicken There was a fire drill exercise recently at where I work. I was in the middle of prepping lunch for the staff and then the fire drill took place which we were informed the previous day that this would happen so I planned an easy meal to prepare. I made my roasted chicken dish that only takes a few ingredients to make. It is the easiest roasted chicken recipe you'll ever need. All you need are, chicken, garlic, white pepper, kewpie mayo (or any mayo would do), and oyster sauce. Marinade the chicken with the ingredients above for at least 30 minutes at room temperature or overnight would be best. Once they are done marinating, get them into a 190 degree Celsius oven for 30-40 minutes depending on the size of those chicken thighs and the dish is done. Remove them from the oven and serve them with your favorite sides or carbs. For this round, I served it with some frisee lettuce that's been lightly dressed and some mini hash browns that are frozen and all you need to do is fry them or oven roast them. Super simple recipe that'll make your life easier in the kitchen! Here's the video of it you can watch: https://www.youtube.com/watch?v=TP1lSsmbLjw

FOODlog #374: Chicken Tikka Masala A friend of mine gave me some garam masala that he made recently and I decided to use it to make some Indian curry. For our first round of using it, my colleague made a popular Indian/English dish - Chicken Tikka Masala. This is a simplified version without using a tandoor to cook the chicken but the marinade and the rest of the herbs and spices are that of chicken tikka masala. The chicken is first marinated in yogurt and a mixture of spices like paprika, cayenne, cumin powder, coriander powder, fennel powder, black pepper and salt. This yogurt marinade tenderizes the chicken as well flavor the chicken meat. It marinades for at least 30 minutes are room temperature or overnight in the fridge to allow all the flavors from the herbs and spices to penetrate the chicken thoroughly. On to the cooking. The dish starts with butter then turmeric powder, paprika powder, cumin, fennel, coriander powder, cinnamon sticks, chili powder, and the garam masala goes in. Next the marinated chicken goes in and it's cooked until the dish gets dryer which takes about 20-30 minutes. He also cooked another dish of stir fried bean sprouts simply seasoned with oyster sauce, salt and pepper, and the dish is done. We ate these 2 wonderful dishes with rice and it was so delicious. The chicken was so flavorful and the curry was divine! A dish that we'll definitely want to cook again in the near future!

FOODlog #373: Birria Ramen Birria Ramen was something I saw online and decided to make it! It looked really easy but it does have lots of steps to it especially since I was doing a recording of this, it took much longer time to cook and prepare it. I start with slicing up beef tenderloin and marinating it with chipotle in adobe sauce, tomato sauce, paprika, and salt and pepper. I left it to marinade overnight and the next day, I cooked it for 2 hours until it was soft and tender. After cooking it, I removed the beef from the liquid and stir fried it with oil until it developed some caramelization and brown bits which gave it so much extra flavor. For the noodles, I simply used some instant ramen and cooked them. I also made a 63 degree sous vide egg and topped everything with some spring onions and sliced cabbage. It was such a delicious dish with a rich and smokey broth. Great recipe to try out.

FOODlog #372: Korean BBQ Roasted Chicken One of my colleagues cooked lunch the other day. He made some Korean Spicy barbecue chicken which he oven roasted. The sauce he got from the clarence section at a grocer which he didn't need to spend lots of time making the sauce since it was a premix. The chicken was boneless chicken thighs that he marinated then oven roasted it at 180 degrees for 30 minutes and basting it with the spicy BBQ marinate every 10 minutes. It turned out sticky, charred, spicy, and sweet. Super delicious pairing with the chicken and especially eaten with rice. We got a side of stir fried Kailan vegetable as well to make this dish super colourful and appetising. Topped it off with some of that chili oil drippings from roasting the chicken as well as some crispy fried garlic and freshly sliced spring onions. It was such a flavorful rice bowl that had a well balanced flavor as well as nutrition. A super delicious lunch that was simple but super delicious!

FOODlog #371: Japanese Curry Chicken One of my first high viewing tiktok videos is this Japanese curry that I made. I'm really enjoying making content but more so when people watch and engage with the content, I feel that it makes it worthwhile sharing something beneficial like cooking and eating which is part of what everyone on the planet does every day. I made this Japanese curry with chicken although my go-to if I were to be making this for myself would be pork belly. But chicken is good as well with the curry, along with potatoes, carrots and onions that I roughly chopped up. Everything goes into the pot along with the Japanese curry stock cubes and some water and cook it for 20 minutes and the dish is done. A simple and inexpensive meal that feeds 6-7 people. Saves lots of time and the work to prepare this dish for that many people is worth the effort. If you're using pork belly to make this dish, cook it for an additional 20 minutes. FOODlog #370: Unagi with Rice After watching Oppenheimer, which is so far the best movie of the year maybe even 2 years, me and my friends went for dinner at a Japanese place called Yayoi in the mall we watched the movie. It was quite late and I guess we were one of the last tables being served. I ordered their Unagi with rice set that came with a side of iceberg lettuce dressed with sesame seed sauce. It also came with some pickled kyuri and a bowl of Miso soup. Everything tasted as it should. Nothing really outstanding as you would expect from stuff that are basically prepared from bottled sauces to table. The Unagi and rice was delicious nonetheless especially since I've been craving for some Unagi for some time now. Service was prompt and the food came hot. If you want Japanese and a quick meal, this is a place that can certainly do that.

FOODlog #369: Mozza Burger, Root Beer, and Curly Fries One of my fave burgers is the Mozza Burger from A&W. It has been one of my fave burgers since I was a kid and until now I always get to a happy place when I have this burger. I can remember the first time I had it. It was a sports day of the church I used to go to with my parents. It was like the only day in the year where our parents just let us go wherever we wanted in the stadium compound that the church rented for a day. My parents gave me some pocket money and I could spend on whatever I wanted. It was such a special day and not an everyday thing in our household. There was an A&W there and that's when I first had my first Mozza Burger. I guess asides from it being a yummy burger, it has that adventure feel to it for me as it connects me with that experience of exploring the stadium grounds. Even thinking back on it now, that experience in my life carries a lot more value than the taste of a burger. Anyways, what a wonderful burger - double beef patties with cheese, tomato slices, lettuce, crispy beef bacon, and their special sauce. Super delicious and the much better version of the McDonald's Big Mac.

FOODlog #368: Lunch at Mum's Went to my Mum's place for lunch the other day and she cooked some super delicious food! She made 2 dishes, both of which are some of my favorites that my Mum makes. She cooked tamarind curry fish with ladies fingers and wax duck with leek and tofu. The curry was so delicious and packed full of complex flavors as a curry should. It was savoury, slightly sour and sweet, and so aromatic and fragrant. The fish was tender yet not falling apart and the ladies fingers were divine! Wax duck is a cured and heavily salted meat that can keep for ages. She roughly chopped them up into pieces and stir fried them with garlic, leeks and tofu. The meat of the duck flavors the dish and it's such a delicious dish to eat! We had all of this with white rice and it was amazing! Always love to have lunch at my Mum's since its food that I don't need to cook and just enjoy!

FOODlog #367: Nasi Goreng Pattaya Been going to this place called 'Kari Kepala Ikan Melawati' for dinner. I've had a few items but mainly I go there for the satay which is not actually by them but a small stall that they rent out to. The main shop itself however I've only tried a few of their dishes. I've tried their 'Ayam Goreng Kunyit' which is chicken fried and cooked with turmeric, onions, long beans, and cauliflower. This was one of the first things I tried there and it was good. My next visit I got their 'Nasi Goreng USA' which translates to USA Fried Rice. It is very Malaysian despite the name and it's a spicy, sweet gravy with beef slices and a fried egg on top of the fried rice. It's one of my favorite dishes and this place makes a fairly decent one. The price is on the upside of RM16 compared to other places but the taste is average for that price point. My last visit was the one that I didn't quite enjoy. I ordered their 'Nasi Goreng Pattaya'. The fried rice was wrapped nicely and the egg was good however the fried rice only had vegetables of those frozen corn, carrots and peas. There was no chicken or any other protein asides from the eggs and all for RM11. It wasn't a satisfying meal at all and wished they served it with some chicken especially at the price point. Overall 5/10 price to food which is average. Not great, not terrible.

FOODlog #366: Cajun Patin Fish Last month I got some patin fish for our staff meal. My colleague cooked it on the flat top with cajun seasoning and it was so delicious! Patin is a type of catfish that's locally farmed here in Malaysia. It's fatty and the flesh is really soft and tender. It was marinated with some soy sauce and other ingredients then searing on the flat top, its finished off with a cajun spice rub and we enjoyed it with some white rice. I made a video for this recipe on TikTok which you can find here: https://www.tiktok.com/@cheflifedw/video/7262716310834990338 And right after I made the video I had a reply from someone that I didn't know. It was a fish supplier that has a farm in Sarawak and he offered to give some sample fishes for us to try at the cafe! I was really surprised by this as I've only just recently started making video content on TikTok and was really excited to get this sample to try. Here's the video of me getting the fishes. I've recently tried 2 of them and they are absolutely delicious! https://www.tiktok.com/@cheflifedw/video/7262716310834990338 Special thanks to borneoproduce.com for this amazing locally farmed fishes that were so fresh and delicious! Had so much fun cooking this amazing produce and of course, eating them!

FOODlog #365: Beijing Hand Pulled Noodles Made a peanut butter and chili sauce the other day for noodles and it was absolutely amazing! It's a Chinese dish that's popular in China and I decided to make it. Since we have chili oil at the cafe, all I needed was peanut butter and to mix it with soy sauce and sesame oil and the sauce mix for the noodles was done. You can use your favorite store bought chili oil and not necessarily a homemade one. It'll work fine and still be very delicious! For the noodles, I used a hand pulled type Beijing noodle which has a chewy texture and a great mouthfeel. Add a little of the noodle cooking water to it and the sauce is done and ready to mix with the noodles. Top it with sesame seed and freshly sliced spring onions for garnish and the dish is ready to be served. Super delicious meal with amazing umami packed in every bite. Will definitely make this dish again in the near future. A handy and easy recipe to have in your cooking book.

FOODlog #364: Oyster Po' Boy Sandwich After the recent debacle last month at the Good Vibes Festival where it got cancelled because of some idiot kissing on stage, our cafe was hit with lots of unsold goods where we needed to add to the menu to cook so it doesn't go to waste. One of the items were the po' boy sandwiches. We now have a Cajun chicken sandwich, shrimp po' boy and an oyster po' boy sandwich. I love the oyster po' boy not because the oysters are great but because the sauce that goes with it is superb! It starts with the Brioche buns that are toasted with butter then lettuce, tomato slices, and pickles go in. The breaded deep fried oysters go on next then it's topped with the amazing cilantro lime aioli which is super delicious! I now use it on everything from fried chicken to eggs. This sauce is absolutely amazing. Fresh, slightly tangy and so delicious! Hopefully we get to recover the lost as there is still 60-70% of leftover stock left that can't keep forever.

FOODlog #363: Ladies Fingers with Dried Prawns Ladies Fingers with Dried Prawns is a Malaysian dish that's one of my favorites. My Mum and my wife can make this dish very well and recently I got the recipe from them and cooked it at my work place as the staff meal. There is a way to remove the slime from ladies fingers which is to simply just cook them longer. I it'll naturally just evaporate and disappear. If you don't like ladies fingers because of the slime, try this cooking method out and it'll taste like a whole new dish. Here is the recipe below along with a video tutorial of how to make this dish. Enjoy! What You'll Need: Ladies fingers - 600g Dried prawns - 25g Onions - 120g Garlic - 40g Salt - 2.5g Chicken Stock - 5g A simple dish that has lots of flavor and if you love spicy food, add in fresh chilies to blend with the paste to make the most authentic version of this Malaysian dish. -------- Click here for full recipe video 👇 https://vt.tiktok.com/ZSLbnpgQr

FOODlog #362: Siamese Beef Noodles at Mamalek Recently I went for lunch after church with my friends and family to this place called Mamalek. It's located at a food court and operates just a small stall inside. I've heard my brother say that you don't have to go to Thailand coz the Siamese beef noodles here are as good. So finally I got to try it out and it is exactly as my brother said! Extremely delicious bowl of noodles and the beef broth was amazing, full of depth of flavor and extremely satisfying! I got their RM16 bowl which has beef tripe, stomach, tendon, beef slices, and meatballs. It's topped with Crispy fried garlic and fresh cilantro. The beef slices and everything else were tender and flavorful. All cooked really well and expertly. Really worth it the price considering you don't have to book a plane to Thailand whenever you have the craving for a bowl of beef noodle soup. Highly recommended to anyone that loves soup, noodles, or beef, and even better if you love all three. Super delicious and can't wait to go back again!

FOODlog #361: Fried Chicken & Black Fungus Mushrooms Nowadays we have lots of boneless chicken thighs and drumsticks at the cafe as we have this new fried chicken burger on our menu. Whenever we can't sell it off, we will have it for our staff meals. This was from the first week where not many people knew about the burger so we had lots of leftovers. We fried them up and his it for our lunch with some white rice. The chicken is marinated in a buttermilk brine together with herbs and spices that make it really flavorful. It's then coated with a seasoned flour drench and then into the deep fryer for 6 minutes to cook. It turns out super crunchy on the outside and juicy in the inside. We also had some leftover black Fungus mushrooms from the other day when I made Japchae. So we used that and cooked a mushroom stir fry together with oyster mushrooms, soy sauce and some chili for an extra spicy kick. A wonderful pairing of chicken and mushroom cooked in a way that isn't normally something you'd see pair on a menu. We get to experiment a lot and eat lots of delicious food working as a kitchen crew. Such a blessed life 🙌

FOODlog #360: Cumin Beef Fried Rice It was one of our part-timers last day of work so I cooked some fried rice for our staff meal since she wanted rice. I made a Chinese cumin beef fried rice and it turned out pretty good for my first try. I started by marinating the beef with cumin, white pepper, and soy sauce. Should've added oil to this which would've made it better and will definitely do so when I cook it next time. I started by cooking some broccoli with garlic, oil, and seasoned it with salt then separated it. In the same pan I then cooked the beef until it was golden brown and seared then removed them from the pan as well. Next I cooked some eggs and made it into an omelet then sliced it into strips where I will use it for garnish at the end. Now on to the rice, on the flat top, I cooked this rice dish teppanyaki style and added in the beef and broccoli I cooked earlier to cook with the rice. Season it with salt and MSG and the dish is done. Serve it up in a bowl with more beef mince, freshly chopped spring onions, and some of the broccoli, and the ribbons of egg on the side and the dish is done! Super delicious and definitely a recipe to have in your Asian dishes to cook.

FOODlog #359: Korean Japchae Have been wanting to cook this dish for some time now. I made Japchae the other day for the staff having in mind one of our staff that loves Korean food. I like this dish too and managed to get the ingredients the other day to cook it. It's a fairly simple dish to make that doesn't require any high level cookery skills but the prep time for this dish takes quite a bit of time. I made this with julienned carrots, onions and peppers. Another thing I added was black fungus which you need to steep it in hot water and then rinse it with cold water. Slice it up into strips as well to match the other vegetable sizes and then the prep is basically done. In some boiling water cook the potato starch noodles and then drained it and put it into a bowl. I also added in some chicken pieces marinated with soy sauce, sesame oil, oyster sauce, and sugar. After cooking the chicken, set it aside and cook the vegetables seasoned with salt. After sauteing the vegetables add the cooked vegetables and chicken to the noodles and the same marinade of soy sauce, sesame oil, oyster sauce, and sugar and mix everything together. Once it's all mixed, it's done and ready to be served! It was such a delicious meal and everyone enjoyed this delicious meal together! ~~

FOODlog #358: Chinese Chicken Soup Sometimes at the cafe we don't have the time nor energy to cook any complicated food for our staff meal so one of our go-to dishes to make are one-pot meals. I cooked this Chinese chicken soup the other day with tofu, pickled vegetables, and tomatoes and it was so delicious. It's a one-pot dish that you just need to throw in everything into the pot and let it cook. It starts of with some oil and sauteing some garlic then the chicken and goes to brown and develop some flavor. Next the tomatoes and pickled vegetables go in and then seasoned with some oyster sauce to taste. The pickled vegetables are also slightly salty so you don't need to add any salt to this dish. Add in water to make it a soup like I did here or lesser water and it will be a dryer stir fry dish. A super hearty and comforting dish that's good on a rainy day or if you're feeling under the weather. This dish will boost your immunity and fill your tummy with warm, comforting feelings! ~~

FOODlog #357: Nasi Briyani with Fried Squid & Chicken Went to this mamak the other day called Q Bistro. Man was it an experience. I had a little extra money since I was being really thrifty with my spending the past weeks so I thought I'd eat a little more food I like. I ordered their briyani, a piece of Ayam kicap and some fried sotong. The food was decent however the staff there were up selling like crazy it felt so pushy. I did hear they have this sort of culture probably taught throughout their employment by upper management but I thought I'd be fine since I rejected all their attempts to add on extras for me. But upon paying the bill, I was shocked that there was an extra charge on briyani for extra rice. I didn't order extra rice but they did it without my knowledge nor consent. These guys are shrewd and so unethical. I don't even have 1 bad review on my Google maps reviews, but this will be the first. I can't even remember the taste of the food coz of this incident. That's how the experience went. I don't mind paying for expensive food but doing this sort of under the table add ons and charges is ridiculous. So a caution to anyone going to their outlets, beware of this.

FOODlog #356: Beef Noodles with Brisket, Tripe, and Meatballs Went for some beef noodles again at one of my go to spots for it. The noodles are handmade and are absolutely delicious. The texture and the taste to it paired with their mince beef is really a thing of beauty. The bowl of noodles come with some vegetables that's been blanched in their beef stock which is super flavorful and topped with their mince. For my side of soup this time, I ordered a mix bowl of beef items. It had tripe, beef meatballs, and brisket beef slices. The brisket beef slices go in to their beef broth for literally 5 seconds and then it's served. It's super tender though they lack a little flavor but tasty nonetheless. The best thing about this meal is their homemade chili sauce. Man is this chili sauce good! Every piece of meat you fish out from the broth has to get a little dipping of this chili sauce and makes the mouthful of food elevated to another level. A simple but delicious bowl of noodles that's affordable and would otherwise never eat this if someone didn't have a business selling it. Super thankful and grateful that it's not too far from where I live. YUMS! ~~

FOODlog #355: Wagyu Bangers & Mash One of the Saturdays last month it was scheduled that there was gonna be only 4 people working that day. I bought some sausages that I saw were going for 30% discount and it was still fresh as it was made in the morning that day itself. I bought chicken sausages and wagyu beef sausages, 4 of each in view that the staff meal everyone would have at least 1 of each sausages. Not the first time we've made bangers & mash for our staff meal but this has got the be one of the best ones yet! I fried them on the griddle until they were fully cooked and had a nice char. For the other components of the dish I made roasted broccoli with garlic and butter. This is one of our go-to side dishes whenever we are tight on time to cook a meal. Another side dish of course is the mash. A simple mash with butter and chicken powder seasoning that's super delicious and full of flavor. A super delicious lunch meal that was easy and quick to prepare but very satisfying and tasty.

FOODlog #354: Creamy Chicken & Mushroom Spaghetti Another day another staff meal to make. This time a made a quick and easy 1 pot sauce with spaghetti. It was a chicken and mushroom white sauce that is really easy to make and feeds 7-8 people. It starts off with a bechamel sauce. In to a pan, add in butter and some oil. This is so that the butter doesn't burn. Next mushrooms that have been sliced are added to the pan and seasoned with salt and pepper. Saute until they change a little in color then add in equal amount of flour to the butter you added in earlier. Next add in the chicken. I'm using chicken breast and I've sliced them up roughly. Season with salt and pepper and then the milk goes in. Add in dried oregano and Worcestershire sauce to flavor the sauce and then finally add in spinach and turn off the heat. The residual heat will cook the spinach perfectly. Give it a final season with salt and pepper to taste then serve it up with your favorite pasta. I served this with spaghetti as it holds the creamy rich sauce really well. The mushrooms give it an earthiness and paired really well with the chicken and spinach. Super easy one pot dish that takes no time to cook.

FOODlog #353: Supernova Cheeseburger A new burger on the menu after a month of R&D. This is new cheeseburger that I'm also the supplier of. My brother makes the patties and we supply the cafe I work at with the patties. The Brioche sesame buns are supplied by another supplier so the only thing we make in-house is the sauce which has been same "not Big Mac" sauce. We took inspiration from the McDonald's Big Mac sauce but gave added some twists of own. In the sauce we have, mayo, mustard, paprika, pickles, pickle juice, sugar, and garlic confit. It's a very well balanced sauce that goes superb with the cheeseburger and compliments the beef patty. For the patty it is a 80:20 ratio of lean meat to beef fat and we sear it on the griddle for 1 minute on each side then we top it with a grilled cheddar cheese and soy caramelised onions which we make in house as well. A really well balanced burger we finally created and it's super delicious.

FOODlog #352: Spicy Mala Dry Ramen Every quarter we have a calibration team meeting at our company's 1st outlet. We have talks and games before a dinner together and this time we had dinner at the outlet cooked by the chefs of that outlet. We had a hotpot dinner with 3 different types of soup bases - tomyam, sichuan Mala, and a chicken broth. There were a large variety of assorted meats like prawns, pork, meatballs, tofu, and vegetables. There were also a few noodles to choose from like ramen and yee mee. For mine, I mixed and match the proteins and got a mix of prawns, meats, and tofu. I also took the ramen which were fresh ramen and super delicious. The texture was amazing and the flavor of the broth I chose sichuan Mala which had a punchy kick to the soup. There were also lots of condiments like garlic, chili, spring onions, and coriander to top on your bowl of noodle soup. I went back for like 3-4 rounds of meats and 1 round of ramen. It was a delicious meal made by the chefs there and really appreciate it as I know how hard it is to cook a meal especially for 20+ people.

FOODlog #351: Black Pepper Mayo Burger @ Burger King One of my fave burgers that is not too pricey is actually Burger King. Their patties are juicy and flavorful and they have lots of promos throughout the year. They recently came out with a new burger which is a cheeseburger with black pepper mayo which is actually the size of a Whopper. I'm a black pepper lover and this caught my eye that I had to give it a try. So I went to an outlet nearby where I live and got this. Although at almost every Burger King outlet I go to, my common dislike is their service and cleanliness which was the case at this outlet. The workers don't seem to be trained properly and look like they really hate their job and just want to get over with it. A common trait I've notice. Not to mention they had music blasting on high at the outlet which was annoying when you're trying to have a meal. I was wondering where is their manager and probably that outlet doesn't have one. Then when I went to wash my hands, I saw the manager sitting at a corner chilling and singing to the song being blasted 🫠 Anyway, the burger was really good! The black pepper mayo sauce was delicious and the patty was juicy as usual. They only gave a few measly slices of Sautéed onions but it was tasty with the burger nonetheless. Their food saves the day but definitely can improve on their service.
