FOODlog #41: Carbonara with A Twist Cooked some spaghetti today for today's lunch and dinner for the family. I used the base sauce which you'd use for making Carbonara for this which is using eggs and cheese. I used 1 whole egg and 3 egg yolks and for the cheese I didn't have any parmesan so I substitute it with cheddar. I also used better quality eggs today which are local free range 'Kampung' eggs. The yolk is creamier and more flavorful.
I also substituted the cured pork with Chinese cured sausage. They are savory and salty like any cured meat so I found it to be good substitute to Italian guanciale. I cut them into chunks like this and pan fried them. I also added in minced pork and seasoned it with salt and pepper and fried them till golden brown.
I then mixed the meat mixture and the cheese and egg mixture together with the spaghetti and it's done. Simple, creamy, eggy, savory, and most of all, delicious!
