"Estofado" for lunch..a mixture of fried banana(saba) fried pineapple, fried pork mix in mascovado sugar, soy sauce, seasoning and onions and garlic. Very tasty and crunchy fried pork,saucy and with a bite of little spice like ginger and chilli. It has also a black powder pepper and dried leaves of basil. Ilonggos best estofado originate from ancient Spanish colonizers who colonies Iloilo before. A very good influence to us Ilonggos.
