•SANTAN• Our neighbor food seller who supply us with rice cakes (suman) also brought us a bottle of freshly made Santan. SANTAN is our local name for Coco Jam. It is prepared with coconut milk and panocha de bao (hardened and unrefined sugarcane chunk - a variation of Muscovado). Pili nuts (also popular in our region) are added to give a more nutty flavor.
