How is Denmark innovated the food industry Denmark is well known for Lego, Carlsberg, IKEA and the Hans Christian Andersen stories. However, the Danish cuisine also revolutionised the food industry with their cooking techniques and the fresh style. From open sandwiches to how fish stews, the Danish cuisine slowly conquered the world. The innovative way of using local products and the fresh philosophy contributed to the evolution of Gastronomy.  I had the pleasure to try traditional Danish during my **visit in Copenhagen** and I can say that the smorrebrod with herring was amazing and the fresh grilled fish on Nyhavn canal was one of the best. If many years ago the Danish cuisine was achieving the basic needs of the consumers, using simple ingredients and root vegetables, to assist fish or meat dishes,  in modern days, the Danish culinary values shake up the industry and  revamped old favourites and ingredients such as rapeseed, oats, cheeses and older varieties of fruits by preparing them in brand new ways.  The main focus was on organic foods, associated with purity and ethics. Denmark national goal for 2020 is to double the organically cultivated areas and improve the agriculture sector. This will have direct positive effects on the Hospitality and Gastronomy industry due to the synergy between those sectors.

As a proof of the Danish cuisine influence on Gastronomy, the Copenhagen restaurant NOMA was named the world's best restaurant for times, in 2010, 2011, 2012 and 2014. In 2015, three Aarhus restaurants were awarded one Michelin star.
