Stuffed Eggplant Yesterday my Mom cooked stuffed eggplant. So I want to share the recipe here.

Ingredients: Eggplants (it is up to you how many) Eggs (4 eggs) Chicken sausage (1 whole packet) Carrots (3-4 pieces) Scallions (bunch of) Cooking oil Procedure: Cut the eggplant into circles and whole through the eggplant, it is where you will stuff the good stuff. Now cut the eggplants, carrots, sausage into cubes. Cut the scallions. Mix the cubed delights, and scallions, into a bowl with egg. Put the cooking oil into the pan place the stuffed delights into the hole of the eggplant.  Fry until brown.
