Happy Friyay, happy eating! Let this blackberry lime meringue pie be part of the friyay party. It's another recipe from the book my boyfriend gave me. It's the first time I've seen such unique combination of a fruit flavored pie. Lime curd with blackberry and coconut milk sounds fruity and creamy to me and I bet it suits the buttered crispy pie crust really well. This is one of the recipes I will definitely try in the future once I have an oven. I'm thinking that cream cheese will also be a nice addition to the coconut milk flavor in the meringue.
