Sunday and Celebrating My Eldest Birthday

Blessed Sunday my dear Read.Cash Family. May this day and the following days bring us much closer to our Father Almighty. Let us always hope for the best and have faith that we will make it through our lives with the blessings from Him. It's Sunday and my eldest daughter's birthday is a double celebration for us. Sunday is for thanking our Lord and for this day we have so much in our hands to be grateful. We are safe and still healthy and my daughter has reached two decades of her life and for all of these, we are so very thankful. Want to say thank you to my awesome sponsors here on read cash. Sunday and Birthday 🎁

My morning started earlier than usual I woke up at 4 am and had first my mug of coffee. And after that, my works in the kitchen begin. I need to chop all the vegetables that we will be using for the foods I am cooking πŸ§‘β€πŸ³. And my eyes were crying when I need to peel the onions πŸ§… funny but every time I did these I always cry. I have six dishes to cook so I started with ***pork kaldereta*** a dish based on coconut cream I need to make the pork tender so it will be soft and juicy when you eat it. My next dish is ***fried chicken and spring rolls*** I have done them yesterday on their first step chicken was marinated and the pork filling for the rolls was already rolled in the wrappers so I need to fry them all. But I still have ***chopsuey*** or mix stewed vegetables in evaporated milk as the base an easy dish to cook. And I have ***rice noodles*** 🍜 or ***pansit*** this will not be forgotten especially on birthdays it is for the long life of the celebrant. And my last dish is ***sinampalukang native na manok or chicken stewed in tamarind base soup*** need also to make the chicken tender so it will be heaven when you eat it. My six dishes were completed. But the celebrant has another dish she cooked ***carbonara*** or we called white spaghetti. So that was seven already. But my aunt came for her special day and brings ***rice cakes*** and we ordered ***pork barbecue*** to add to the food.

And the celebration begins one by one her classmates arrived and one of them also brings white rice cake my aunt bring brown one or we called ***kutsinta.*** All of them were happy for they have not seen each other for a long time because of the pandemic. I am happy to see my daughter's happiness and all of my work was paid off. Seeing my kids healthy and happy makes me feel so proud. And when it was dark already comes they all bid farewell and I say thank you for all of your time to visit your classmate and I hope to see you all again.

So my Sunday was tiring but happy at the same time. I am very grateful that all of these were granted by our Lord. Family is all that matters and their love and support always give me the strength to continue to fight for having a good life for all of them.
