Stir Fried Pumpkin with Chicken Breast and Egg - Great that I got a rain last night until early morning, so today the weather is not that bad with less sunshine, a bit cloudy at around 29 °C. Don't do any outdoor gardening for today and only walked around to check the drainage and irrigation in the garden to make sure of no water soak on plants. I wanna try the taste of pumpkin from my first batch of harvest by cooking a menu for lunch. So my lunch today is Stir Fried Pumpkin with Chicken Breast and Egg. I recommend to clean, cut off the outer skin, inner bits and seeds of the pumpkin. Cut the pumpkin into bite size that you like then boil to soft but not too mushy for 5-7 minutes to reduce the cooking time. To cook the menu, simply heat the pan with oil and sauté garlic for lightly browned and fragrance, add chicken breast and fry to well cook. Add pumpkin with little water until boiled then crack the egg and scramble in the pan. Cover the lid for 30 seconds for egg to be cooked. Then seasoning with light soy sauce, fish sauce, pinch of sugar and mix well until the water dry up. Turn off the heat and top up with white pepper. You can garnish with sliced spring onion or basil leaves if you like. Actually without any meat and only stir fried pumpkin and egg is always a perfect and healthy menu. #FoodPhotography
