Yesterday was a rainy day all day, but there is no rain today, which is dark and gloomy. This morning, I took the time in my garden to pick some vegetables for my cooking. I chose some Chaya Tree Spinach leaves and stalks for my stir-fry menu. Chaya Tree Spinach is a leafy green vegetable shrub that grows to about 2 meters in height and resembles a cassava plant. Chaya Tree Spinach, like no other spinach, cannot be eaten raw because it contains toxins that must be cooked before consumption. Chaya Tree Spinach contains a high concentration of vitamins and minerals. Chaya contains more iron than leaf spinach and is high in fiber, phosphorus, and calcium. I've never tried that one yet Andy. Never heard of it as well, the chaya spinach. Are these its flowers? tiny and yet so beautiful. Have a great day, it's raining here now on my side but the tropical storm already left our par (Phil. areas of responsibility).
