Rhubarb is a vegetable, but is sold as a fruit. The special, sour taste comes mainly from malic acid. The roughness comes from oxalic acid and varies between different varieties. It has grown fast in the last week and I take some home with me. I make pie, jam, juice and lemonade out of it. Also good to butter fry to bring out the acid, then served with vanilla ice cream. 😋

I like that.... we have in the garden as well, all the goodies came form it... oh, and when I was a kid, we just ate it raw like nothing happened.... well it happened, cause it was more sour than sweet and we just took the second bite and spitted out... Great memories. >D
