Whether you are vegan, vegetarian or a meat eater everything we eat is alive. Plants are as alive as a cow or chicken, just because their way of living is different to ours it doesn't mean they are not alive. They start as a seed, like us, they grow and then pop out when ready, like us, they live their life growing and if left alone they will age and whither and die, just like us. The leaves on my young eucalyptus tree have veins, the colour slightly changes depending on the health of the plant, if it gets sick I can heal it with plant food and it needs a constant supply of food to live and grow.
