With roots that go back to Colombo, the capital of Sri Lanka, colombo powder always contains these four spices: coriander, chiles, garlic and turmeric. Then it varies from a local maker to another, so you can find bay rum tree, cinnamon, saffron, mustard seeds, pepper, cardamom, star anise, ginger, tamarind or cloves. Colombo powder contains also roasted uncooked rice for a great nutty taste. It also acts as a natural thickener when cooking, which makes this seasoning great for soups and stews.
