Fun fun fennel… what a funky veggie with its thick bulb that grows above ground, its light feathery leaves that resemble dill, its seeds producing small yellow flowers providing nectar for the bees. Every part is edible. Low in calories, high in nutrients like dietary fiber, potassium, vitamin C, to name a few, fennel is a member of the carrot family, Infusing fennel leaves and seeds helps to lose weight and to reduce intestinal gas (add some in your cooking water too!) They are also tasty spices. 👌 The bulb has a fresh, aromatic anise flavour. It can be eaten raw, sautéed, roasted, or even added to soups and sauces. When raw, it has a crisp texture similar to celery and a fresh licorice flavor.
