There is a Christmas sweet that is made of papaya (here we call it "lechosa"). I want to make some, but now I can't find green papaya at the markets. I don't know what happened to the distributors or the farmers this year. (Maybe I should plant a papaya tree in my backyard like @kennyroy did 👉 https://noise.cash/post/76k70n0h2v0q) Last time I cooked this sweet, I used an electric pan. As it keeps the temperature constant, the sugar melted without burning out or sticking to the pan. It had a perfect texture (thick like honey) and flavor; and I obtained much more liquid caramel than when I make it in the gas cook. That's why I want to use it as a topping for my cassava beignets (see the picture). I know it will be the perfect combination. I have to keep looking. I need to find that green papaya before New year's eve. It is an important matter, because I want to resume this project and carry it out this 2022.
