Don't throw away your rotten Yam use it to prepare this Food. Yam is a food that is loved by many. When it's yam season many People will want to buy so many tuber of yams and store or save. The problem is that if you do not know any of the preservative methods then you may suffer a huge lose. One way of preserving fresh yam is to have consistent Light and then nicely peel the yams and cut it into desired shape of your choice. Put it into a nylon bag and preserve in your deep freezer. Anytime you need it your yam will be fresh. Unfortunately,light is an issue so what can you do when you observe that your yams are bad and there are no chances of cooking,roasting or frying them?.
It's very simple. Just peel the yam and dry all under the Sun. After some days it should be properly dried. Then you can take it to the grinding machine and grind. Then you have your Yam flour Powder which is processed.This is popularly known as Alebo or Alubo. HOW TO PREPARE YAM POWDER Remember your food will look black but very delicious. This end product is known as Amala in Yoruba. 1) Put your water on fire. When the water starts boiling remove some of the hot water 2) Start adding the flour gradually into the pot and stir. 3) When it's solid add little hot water and cover. 4) When it's well cooked stir for the last time with your turning stick as if you're making Garri or Eba.
Food is ready.

In my country Bangladesh people call it 'Ranga alu', it is known also as 'Misti alu', Alu means potato and misti means sweet.
