Time for dinner! With the leftover chickens from Hainanese Chicken Rice, what else to cook except this dish called 'Leftover Vegetables', we called it "Chai Buey" in Hokkien language means 'chai'=vegetables and 'buey'=ending/tail/leftover. We cook this dish with mustard leaves, dry tamarind, dried chillies and lemongrass (optional). But in order to make it children friendly, I omit the dried chillies and lemongrass. So lesser kicks for the adults. Very easy to cook, just put all into the pot after stir fry onions, garlic and ginger, I added in pork belly and tomatoes too. Stew for one and half hour, voila! Yummy with rice. Slurp!
