Mango Cake

Hello people and hello world!!! I'd like to share my new recipe learned. This was included in my cake variety. I sell them and it's my new best selling product. Mango cake is basically made of sponge cake, buttercream and mango sauce.

Ingredients: **Sponge Cake** 3 pcs eggs separate whites and yolks 1 cup all purpose flour 1 cup white granulated fine sugar 1/2 tsp salt 1/2 cup oil 1/2 cup milk **Mango Sauce / filling** 3 pcs ripe mangoes peeled and cut into cubes 1/2 cup granulated fine sugar 1 tbsp corn starch **Mango buttercream** 1 1/2 cup softened unsalted butter 2 cups powdered sugar 3/4 cup mango sauce

Procedure: **Sponge Cake** Beat egg whites until foamy. Gradually add 1/2 cup sugar as you continue beating the egg whites. Do this until soft stiff peaks form. Set aside. Cream together egg yolks and remaining granulated sugar. Beat until color turns pale. Then add oil and milk and mix very well. Add all purpose flour, salt then continue to mix until well combined. Fold in meringue (beaten egg whites). Do not over mix. Place mixture in a baking pan. Do not grease. Bake over 170 C for 30 minutes or until toothpick inserted comes out clean. **Mango Filling** Mix mango, cornstarch and sugar in a bowl. Transfer in a saucepan and cook over medium heat. Stir constantly until mixture becomes thick. Set aside and allow to cool. **Mango Buttercream** Beat softened butter on medium speed. Wait until it doubles in volume and slightly turns pale white. Gradually add powdered sugar. You might want to add more if needed. You need a stable buttercream so it is important to achieve a stiff consistency. Next, pour about 3/4 cup of mango filling as you continuously beat the buttercream. Be sure to leave some of the mango for the topping.

**Assemble the cake** Make sure the cake is cool enough before frosting to avoid buttercream from melting. Brush sponge cake with mango filling syrup. Cover it with butter cream. Pipe your preferred design for the cake. Top it with mango filling. Enjoy! ____________________ Pictures shown above are my finished products.
