Good mornight I forgot to tell you last night about my dinner so I'm posting it here now instead. We have many eggplants so I made some eggplant omelette. You just have to grill or boil the eggplant and flatten it out with a fork next is beat your eggs and put some salt pepper and seasoning. One by one soak the eggplant on the egg mixture and fry it.
