FOODlog #4: Hong Kong Chicken Congee

Super simple but hearty and delicious lunch today.

I made some chicken porridge for the family today. Sometimes when we will want to have porridge for a meal because it really makes your body feel very wholesome and a simple reason is when you're eating congee, you're not eating other "unhealthy" food.

Congee is good for the body and easy to digest. I heard it lubricates the intestine and helps with digestion and strengthening the body. Imagine chicken soup but a heartier version of it.

For the chicken, marinate it with some salt for 15-20 minutes and that's it. For the rice I wash and rinse them twice and then into the wok. Add water and some large slices of ginger, salt, and sesame oil.

Place the chicken on top of the rice, place a lid on and bring it up to a boil. After it starts boiling, lower the fire and simmer. Check every 3-5 minutes and stir the congee so the bottom doesn't stick and burn.

I use chicken thighs and after about 20 minutes, remove the chicken from the porridge and turn off the fire. Once the chicken is cool enough, debone it from the chicken and shred the meat then add it back to the porridge.

Taste and season and you're done. Before serving it, add a drizzle of sesame oil and some white pepper. Yummy!
