My eldest son told me yesterday that our peanut butter in the fridge it will expire next month. Then the youngest suggested to me it's better to cook Kare~kare(Filipino Dish)or beef stew in peanut sauce. Here it is my own version ox tripe and tail stew in peanut sauce. This is almost same taste to Malay satay coz of the peanut sauce. The toppings at the middle is shrimp paste, i just put it there for the photo shoots. The veggies it include eggplant, long beans, local bok choy and banana heart. For the coloring i used annatto seeds.
