Humans who have a job that relies on them offering excellent service. So, if you don't want to take the risk, go for a job that isn't dependent on how well you perform. Become a server if you believe your service will earn you more money than you can make at a set wage. However, don't provide poor service and then claim that it's because of everyone else that you're broke. Like the majority of people, I tip well with good servers. 🤷
