Henbit deadnettle (Lamium amplexicaule) is a wildflower in the mint family that is most frequently seen early and late in the year in many parts of the world. It's a low-growing (no more than 10" tall) annual plant that many gardeners consider a nuisance weed. The young leaves and shoots can be eaten raw or cooked, as can the stems and flowers. Henbit has a slightly sweet and peppery flavor, similar to celery."
