Pancit Malabon, Pancit Luglug, Pancit Palabok. I don't care about the name. I just love eating this. It's my Mom's Specialty. All our friends and relatives always look forward to this everytime there's a special occasion or family gatherings in our house. And my Mom is so happy that everytime she cooks this, it's a Blockbuster! I took home some of this yesterday so I can eat it for my afternoon snacks/merienda. I'm actually trying to copycat her recipes, but I cannot do it perfectly. My Mom is a good cook, it's just one of her specialties. What's your Mother's specialties? Can you do it too?
