Jollof rice Jollof rice is a rice dish from West Africa. This dish is made with long grain rice or short grain rice depending on one’s preference, although its ingredients and preparation methods vary across different regions but I’ll be writing about the Nigerian way of preparing this delicious meal. https://en.m.wikipedia.org/wiki/Rice_dish https://en.m.wikipedia.org/wiki/West_African_cuisine Ingredients; Rice Tomato paste Blended pepper(Habanero pepper,Tomaotoes,Red bell pepper and onions) Bayleaf Chicken stock Seasoning powder Thyme Curry Salt to taste Butter (optional) Nutmeg(optional) Preparation of Jollof rice Start by sautéing some finely chopped onions and bay leaves with little butter or oil, then add the tomato paste to fry it. Add the blended pepper into the fried mixture, add thyme, curry and chicken stock. Add seasoning powder and salt to taste, cover to let the sauce boil. Parboil the rice to avoid the mushy type of rice at the end. After the sauce has boiled, add the parboiled rice and cover the lid with foil and reduce the heat underneath to avoid burning of the jollof rice. Check back after some minutes, if the rice is still hard, instead of adding water, add butter and let it simmer. Food is ready ☺️ This meal can be served with either chicken, turkey, beef or fish. Jollof rice can also be baked in the oven as well. If you want to enjoy the meal to the fullest, you can have some orange juice to go with it 😃.
