Las partes del caprino pasan por un proceso de salazón, adobado y ahumado,y luego se guisan de una forma muy sencilla con pimentón, ajo y sal, y poco más. El resultado, un plato genial. ------------- This is cecina de chivo, a specialty from the Vegacervera area, in the central mountain of the province of León.
