I used to have a giant chayote plant in my backyard too, but the ducks living there eaten it all - leafs, trunk, roots. If you want to know if something is edible, watch our animal brothers, they know. If i ever need, now i know i can eat the chayote leafs too Chayotes are mainly water, with a lot of vitamins and minerals, low fat. Can be used in soups, salads, sauteed...
