Yema cake For the Sponge Cake 2 large eggs, whites and yolks separated 1/2 cup sugar 1/2 cup butter, room temperature 1/2 cup milk 1 cup cake flour 2 teaspoons baking powder 1 teaspoons vanilla extract For the Yema Frosting 2 cans (14 ounces each) sweetened condensed milk 4 egg yolks 4 tablespoons butter For Topping/Garnish 1/2 cup almond slivers 1 cup grated cheese https://cbb34496e2e912768c0422a49df192a5.safeframe.googlesyndication.com/safeframe/1-0-37/html/container.html Instructions SPONGE CAKE Preheat the oven to 400°F. Line the bottom and sides of an 8-inch round pan with parchment paper and set aside. In a bowl, beat the egg whites using a mixer at low speed for 2 to 3 minutes or until soft peaks form. Gradually add 1/4 cup of the granulated sugar, a tablespoon at a time, while continuously beating. Once all sugar is added, turn up the speed to medium and continue beating the meringue until it forms stiff glossy peaks. Set aside. In a separate bowl, cream the butter and remaining 1/4 cup sugar for 3 minutes or until light in color. Add the yolks one at a time while continuously mixing for about 2 minutes. Add milk, cake flour, baking powder, and vanilla extract to the egg yolk mixture. Beat until batter for about 2 minutes or until smooth. Gently fold in a third of the meringue into the egg yolk mixture and then add the remaining meringue and fold until well combined. Pour into prepared pan and bake for 30 minutes in the preheated 400 F oven or until a toothpick inserted in the center comes out clean. Remove from oven and let the cake cool in the pan for about 10 minutes before completely removing from pan to a cooling rack. Remove the parchment paper off the cake and let it cool down before frosting. For the Yema Frosting In a bowl, combine condensed milk, egg yolks, and salt (if using). Whisk until well-blended and evenly colored. In a wide, nonstick pan over medium-low heat, heat butter until slightly melted and still warm (NOT hot). Add egg-milk mixture and stir well to combine. Cook, stirring regularly and scraping sides and bottom with a spoon, for about 15 to 20 minutes or until mixture thickens to a spreadable paste. Remove from heat and allow to cool. TO ASSEMBLE Once the sponge cake is completely cool, cut the horizontally into half. Spoon about 1/4 of the yema on top of the bottom cake half layer. Using a spatula, spread evenly to cover the surface with about 1/8-inch thick of yema filling. Place the top layer half of the sponge cake on top of the frosted cake layer. Scoop and spread enough yema frosting on top of the cake to cover the surface and make a frosting layer with about half-centimeter thickness. Set aside about 1/4 cup of the yema and using an offset spatula, spread to cover the sides of the cake. Scoop a handful of almond slivers and gently tap to the sides of the cake. Pipe the reserved 1/4 cup yema frosting on the top and at the bottom edges of the cake to decorate. Sprinkle the grated cheese on top of the cake. Serve immediately or chill in the fridge. Notes :’Refrigerate the excess and use as a spread or enjoy as it is. Note 2 - Just cook the Yema spread for a few minutes longer (3-5 minutes) to make it easier to use as frosting.

Mango float **Ingredients**: 1 box of Graham crackers 1 box of Graham crumbs (optional) 2 small cans Nestle cream 1 can of Condensed milk 1 can of Evaporated milk 6 ripe mangoes, sliced **Instructions**: Prepare a rectangular glass dish with or without lid. In a bowl, whisk Nestle cream until smooth. Add the condensed and evaporated milk. Whisk until well combined. Using a ladle, place a small amount of the milk mixture into the bottom of the dish, then place a layer of Graham crackers and top with the sliced mangoes. Ladle a mixture again, slowly pour over the crackers and the mangoes, making sure it covers all of the Graham crackers. Repeat by placing layers of crackers, mangoes and milk mixture. Top off with Graham crumbs (or just crushed some Graham crackers). Cover and freeze overnight. Serve and enjoy!

Cassava cake Ingredients 2 packs grated cassava about 2 lbs total weight 2 cups coconut milk 1/2 12 oz. can evaporated milk 3 pieces egg 1/4 cup butter melted 6 tablespoons cheddar cheesegrated 1/2 cup condensed milk 14 tablespoons granulated white sugar Topping ingredients: 2 tablespoons flour 2 tablespoons sugar 1/2 cup condensed milk 2 tablespoons cheddar cheesegrated 2 cups coconut milk Instructions Make the batter by combining the grated cassava, butter, 1/2 cup condensed milk, 1/2 cup evaporated milk, 6 tablespoons cheddar cheese, 14 tablespoons sugar, and 2 eggs in a mixing bowl and mix thoroughly. Add the 2 cups coconut milk in the mixing bowl where the mixed ingredients are. Mix again. Grease the baking tray then pour-in the batter (these are the ingredients that you just mixed together). Pre -heat oven for 350 degrees Fahrenheit for 10 minutes then put-in the baking tray with batter and bake for 1 hour.Remove from the oven and set aside. Meanwhile prepare the topping by combining 2 tablespoons sugar and flour in the heated saucepan. Pour-in 1/2 cup condensed milk then mix thoroughly. Add 2 tablespoons cheddar cheese while stirring constantly. Pour 2 cups of coconut milk and stir constantly for 10 minutes Pour the topping over the Cassava Cake (baked batter) and spread evenly. Separate the yolk from the egg white of the remaining egg (we’ll be needing the egg white only) Glaze the topping with the egg white using a basting brush. Simply dip the brush to the egg white and brush it on the cassava cake. Set your oven to broil mode. Broil the Cassava cake until color turns light brown. Garnish with extra grated cheese on top. Serve. Share and enjoy!

Chocolate mousse Ingredients **4** large egg yolks **1/4** cup sugar **2 1/2** cups heavy whipping cream **8** oz semisweet baking chocolate, chopped Steps **1** Beat egg yolks in small bowl with electric mixer on high speed about 3 minutes or until thick and lemon colored. Gradually beat in sugar. **2** Heat 1 cup whipping cream in 2-quart saucepan over medium heat until hot. Gradually stir at least half of the hot whipping cream into egg yolk mixture; stir back into hot cream in saucepan. Cook over low heat about 5 minutes, stirring constantly, until mixture thickens (do not boil). Stir in chocolate until melted. Cover and refrigerate about 2 hours, stirring occasionally, just until chilled. **3** Beat 1 1/2 cups whipping cream in chilled medium bowl with electric mixer on high speed until stiff. Fold whipped cream into chocolate mixture. Pipe or spoon mixture into serving bowls. Refrigerate until serving.

Graham’s ball Graham Balls Recipe **Ingredients:** 3 cups crushed graham (+ 2 tbsp for dusting) 1 cup condensed milk (+ a little bit more if needed) chocolate candies or marshmallows for filling mini-marshmallows, sprinkles, or colored sugar for garnish **Preparation Instructions:** Combine crushed grahams and condensed milk. Blend well. Make sure it’s not too wet nor too dry. Add a bit more crushed grahams if it’s wet and a bit more condensed milk if its too dry. Shape mixture into one inch balls and put a piece of chocolate candy or marshmallow inside. Roll the balls in crushed grahams, sprinkles, mini- marshmallows or colored sugar to finish. Chill before serving.
