Tried my hand at making a bibimbap-inspired dish today! I’m doing some shelf cooking (which is basically defined as cooking using the stuff you already have in your pantry instead of buying what you need) and I had a variety of veggies on hand. I thought the best way to use them was turn them into a vegetable-heavy dish. I first thought of making pancit but whooops, we don’t have the star of the show- the noodles. Lol! So instead I just decided to make my own little version of bibimbap. Actually, I’d rather call it a bibimbap-inspired dish rather than classify it as bibimbap. I respect the original recipe and wouldn’t want to taint it in any way! So in the photo are the veggies I used and to this I’ll add the meat (ground beef cooked bulgogi style, in my case), rice, fried egg, gochujang, sesame seeds, and roasted sesame oil. I sort of tried to be personally practical and just mixed everything in one pot instead of cooking the veggies one by one and arranging them prettily on top of the rice. The result tasted really good! It’s different from the actual bibimbap of course but it’s almost equally good! I do respect the original recipe very much, and I greatly appreciate how much effort they put into making such a wonderful classic bibimbap. I would definitely recommend this dish to anyone- either the classic or your own creation inspired by the classic! 💕 #Food
