Friday Special After last night’s “fancy” dinner, I wanted to make it simple and easy tonight. And what could be more comforting than the all-time favorite “Friday Special” in the Philippines, ginisang monggo (mung beans)? I find this warm meal just perfect for the chilly weather. :) Come to think of it, why is monggo called a “Friday Special”? I first came across the idea in our college cafeteria but I never figured out the story behind it. Most people that I meet call it that, too, so I’m guessing it’s not just our cafeteria who coined the term. Anyone else having monggo for tonight’s dinner?
