Since it’s still quite a foggy and windy evening, I thought it was nice to have this hearty Japanese beef curry rice for dinner. ☺️ It’s such a simple recipe and the ingredients are pantry staples as well! Except maybe for the curry roux. 🤣 First, I sautéed some minced garlic and ginger in a little oil. I added the beef and let it brown before taking it out. Then I sautéed the lightly salted onions until they caramelized, put in the potatoes and carrots, and sautéed them a bit as well. I added back the cooked beef and some water and brought it to a boil. I removed the scum then turned the heat down to a gentle boil. I left this to boil for an hour for the potatoes and carrots to cook and the meat to tenderize. When the everything was tender, I turned the heat off and added the Japanese curry roux. I mixed until the roux has completely dissolved and the sauce has thickened a little. This is optional, but I added 1 tablespoon of tomato ketchup to further deepen the flavor. 😉 Some add chocolate, some add instant coffee powder. I know it doesn’t sound right but they swear on their recipes so I would definitely like to try this next time!! For now, it’s just ketchup for me. Lol! Then I turned the heat back on and let it simmer for about 5 more minutes and it’s done! Ready to serve with steamed rice! 😋 This is such an easy recipe and I can confidently recommend it to beginners. It’s fool proof, guys! 😉 #Food
