Clear Soup with Egg Tofu and Minced Pork - A heavy rainstorm began early this morning and ended about an hour ago. I don't go for walks and instead spend my time with my cats. The weather is rapidly changing from extremely hot to rainy and windy, giving me a feeling that I am catching a cold. So I need to prepare a meal that help me warm up. My today's dinner is clear soup with egg tofu and minced pork, with carrot, Chinese cabbage, and spring onion for garnish. This is a quick and easy menu that takes no more than 15 minutes to prepare. Simply boil the water with sliced carrots and shiitake mushroom, which will add a light sweet flavor to the soup. Combine the minced pork, ground pepper, crushed garlic, crushed cilantro root, light soy sauce, and oyster sauce in a mixing bowl. Once the water is boiling, add a small piece of minced pork. When the minced pork is almost done, add the Chinese cabbage and season with light soy sauce and a pinch of salt to taste, then add the egg tofu and return to boil. Remove from the heat and garnish with sliced spring onion. This is one of my favorite quick and easy lazy meals to make at home on a cold and rainy day. What are you having for dinner today?
