Tofu Stir Fried - Summer time in Thailand is like a hot oven with an average temperature of 36 C during the day time. Great that I have big trees and greenery surrounded my home that can help me cool down during the sunny day. For tonight dinner, I need the menu that is quick and easy with less cooking time to avoid the heating frame. Tofu Stir Fried is one lazy easy cooking menus that I really enjoy. I fancy it for today with ear wood mushroom, ginger and green pepper and chicken breast. Cut the tofu in cubes and pan fry with oil for golden brown color then set it aside. Use the left over oil on pan and sautée with chopped garlic. Add sliced chicken breast and cook well. Add 2-4 spoons of water, seasoning with oyster sauce, soy sauce, pinch of salt and sugar. Add sliced ginger, ear wood mushroom and sliced green pepper. Mix all ingredients. Add tofu and cover with lid for 1-2 minutes to dry up some sauce and water. Then turn off the heat and top up with white pepper. I try my best to avoid any carbs for dinner and love to have tofu and chicken breast as a source of proteins to fill my hungry. How about you?
