We have a staff at the cafe that doesn't eat beef so whenever she's on her off day, we often opt to cook and have beef for our staff meal which is exactly what we did. I made a beef ragu with fusili. I started by sautéing some onions, carrots, and celery that I chopped up. For the carrots I shredded them using a grater so they can incorporate thoroughly in the sauce. After they soften slightly I added in the beef slices to sear. I also added in beef fat to make it extra rich and flavorful. Next, the chopped tomatoes goes in and some water. Season everything with salt and some chicken/beef stock then bring everything up to a boil and close the lid to simmer for an hour. If you have more time, let it go for as long as you can. For the pasta, I simply boiled them in water which the water I used to add into the ragu whenever it starts to dry up. Add in the cooked pasta to the sauce and cook together for another 5 minutes and your done. Serve and top it off with parmesan cheese and enjoy.
